    This paper analyzed firstly the positive meanings of imperfect competition, diversification of quality concept and role of various actors, and secondly the complicated procurement activities by Japanese food-related firms. Though quality control systems for vegetables have been strengthened after pesticide problems happened in China, they still remain partial. It is a crucial task for food-related firms to establish a supply chain based on trust. Long delivery time and large lot size are inevitable for imported products. As far as Japanese food-related firms express an orientation for postponement procurement, Japanese agricultural products can gain the competitive advantage of physical distribution quality. On the other hand, as there is a case that imported agricultural products are positioned as a means of differentiation strategies, any quality advantage depends on each food-related firms strategy.

    In the 1980's, supermarkets arid food service industry companies made great progress, becoming leading channels of food distribution. This paper presents a statistical analysis and a case study of large-scale supermarkets and food service industry companies in order to analyze their marketing characteristics and current trends in perishable food distribution. The results of this study are summarized as follows: (1) Supermarkets and food service industry companies have been selecting vendors in view of efficiency. (2) Main vendors selected by supermarkets and food service industry companies are not producers and agricultural cooperatives but wholesale dealers. Advanced supermarkets with well equipped facilities for distribution and processing tend to lay in stock from large-scale producers directly. In any case, they attach much importance to procuring large quantities and maintaining the stability of both quantity and quality. (3) Although computer-based, point-of-sale systems have been introduced in a lage proportion of supermarkets and food serviceindustry companies, they have not had much effect on their stocking of perishable foods. It can be concluded that at present, supermarkets and food service industry companies base their marketing strategy on mass selling and mass stocking, therefore, they still maintain economy of mass consumption.

    2021年度は、2020年度と同様に、新型コロナウイルス感染が続く中、以下のように所期の研究活動を実施するにはいたらなった。
    第1に、加工・業務用青果物の主な流通チャネルの特徴を把握するために、2019年度に実施した加工・業務用青果物流通に関与する大手コンビニエンスストアに中食食品を供給する大手ベンダーのヒヤリング調査の追加調査を実施する予定であったが、コロナ禍の影響により実施を控えざるをえないこととなった。
    第2に、加工・業務用青果物の流通事業者、あるいはより広く青果物流通全般さらには最新の流通・消費の動向に明るい専門家を招いて研究会を開催する予定であったが、相手方の職場の許可が下りないため実施できなかった。もっとも、共同研究者での研究会は2回ほど実施し、情報共有を図りながら、課題の精査や調査の進め方について議論した。
    第3に、生産者や中間流通企業、外食や中食企業などに対するアンケートの実施についても、コロナ禍での「需要の蒸発」に苦慮する企業が多数存在する中、業界団体の協力を得ることが難しい状況が継続した。各事業者に対する、品目・用途別に、交渉方法、価格決定、数量決定、取引期間、代金決済方法、生産方法の特定化、ペナルティ、などの調査については、2022年度に実施したい。
    以上のように、2021年度中に2020年度に実施できなったアンケート調査、ヒヤリング調査を実施し研究成果の取りまとめを行う予定であったが、新型コロナ感染の影響を受けてその実施が困難となった。関連業績はやや周辺的な内容についての整理にとどまった。しかし、共同研究者の所属機関によっては出張許可が下りない状況は解消されつつあり、2022年度に実態調査などを精力的に実施する計画である。、

    We confirm the efforts to the direct trading of fresh produce by agricultural cooperatives and farm corporations in producing area by a questionnaire survey and hearing survey. And we reveal the requests, the compliance and the evaluation on the trade practices from retail companies.Direct trading of fresh produce between agricultural cooperatives or farm companies and retail companies are spread as the numbers of cooperatives and companies. However the trade practices of fresh produce are limited to the discount request for special sales and the fee for distribution center compared with that between food processing companies and retail companies.Comparing the agricultural cooperatives and agricultural production corporations, the latter is more request the trading practices, and it has been some sort of the correspondence. However they don’t think a big burden for trade practices.

    This is a study into determinants, including noneconomic factors, of Fresh Fruits and Vegetables consumption, and its main findings are summarized as follows. An analysis of demand systems revealed that salad is increasingly consumed by households, and that households with fewer members consumed more salad. Covariance structure analysis revealed that the amounts of both vegetables and fruit consumed were affected by people’s attitudes toward health and safety, while that of vegetables consumed was affected by people’s attitudes toward cooking, and that of fruit consumed was affected by people’s attitudes toward eating with other people. These results suggest that highlighting the healthiness and safety of Fresh Fruits and Vegetables is effective in increasing their consumption, proposing recipes and offering pre-cut vegetables are effective in increasing consumption of vegetables, and spotlighting the enjoyment of eating with others is effective for increasing fruit consumption.

    In this study, we study empirically from the perspective of vertical marketing system, the aspect of vertical integration of agricultural and marine products distribution channels. At that time, rice, fruit and vegetables, meat, seafood is the subject of research. As a result, in the form of vertical marketing system, the difference can be seen by the item. Among them, rice and vegetables even in vertical integration of distribution channels was weak historically, that it is seen as a backward integrated vertical marketing system became clear.

    The increase in the number of stores of the each supermarket chain and the enlargement of the each store proceeded rapidly in the 1990's, and it accelerated the reorganization of the food retail structure. However, each supermarket chain has the problem of the lower profitability of the fresh foods and the decline in the sales efficiency.
    The important elements of the fresh foods merchandising of the supermarket chain in the 1990's are the development of the logistics which utilized IT, the building of the fresh foods SCM and the adapting to the consumer's needs for the safe foods.
    The fresh foods merchandising of the supermarket chain is showing the tendency which is standardized among the sales forms and the chains. However, the competition among the sales forms and the chains is looking for making a difference in the merchandising. The important means of the case are the consuming region place products and the organic farm products.
    Each supermarket chain purveys fresh foods in the various ways in addition to the wholesale market at present. As the result, the forming of the supply chain to have supported a merchandising in the supermarket chain at the wholesale market and the supplier, the place of production is moving ahead.
    Through above things, the fresh foods market structure under the leadership of the supermarket chain is formed at present, and the supply chain which supported a merchandising of the supermarket chain in the stage of relay market and the stage of a place of production is being formed.

    These days, many food safety issues have occurred all over the world. These are resulting from BSE (bovine spongiform encephalophathy) and foot-and-mouth disease in the Europe, mainly in United Kingdom, pig pest in Germany, Denmark and Holland, foot-and-mouth disease of pork in Taiwan and South Korea, cock's influenza in Hong Kong and 0157 and foot-and-mouth disease and BSE in Japan. Introduction of HACCP (Hazard Analysis and Critical Control Point) and ensuring food safety and hygiene control are important theme in each country's food system. And also, examination of GMO (genetically modified organism) safety and labeling of organic foods with certification are consumer's important interest at the moment. This study was planed both to analyze and make clear the overseas trend related to problem of ensuring food safety.
    This study's achievements are summarized as follows.
    (1) Obtaining both of information and an academic conference's movement directly from study member's connection in many country's of world, about cause of threatening agricultural products and food safety and introduction of HACCP as the counterplan of it, we conducted economic analysis of food safety in the world' food safety system.
    (2) We have opened new area of the food system study with our confidence that in the near future the world food system will be facing food safety competition from cost competition.
    (3) We concluded theoretically and empirically that constructing the trade theory taking into account of ensuring food safety and hygiene control, are necessary for solving the international trade problem, while tariff tax have been lowered gradually so that import of agricultural products have been expanding.
    (4) We recommended that our food system should implement HACCP into whole marketing stage, including such as agricultural production stage, processing stage, wholesale stage and retail stage, and should also improvement level of ensuring food safety, food hygiene control and quality assurance system, leaning from overseas experience.
    (5) We suggested importance of studying deeply in our country's agricultural economics society, consulting from the study trend of other society, especially in Europe, United States and Oceania

    Domestic research activities
    The final tuning and the subject allotment among investigators had been confirmed at the begging stage since this year would be final year. Domestic field works were limited to a small scale and supplement lily.
    Oversee exchange and investigation activities
    Since we found a similar development process in food marketing system in South Korea, we conducted "Japan-South Korea joint symposium" in Seoul. Not only scientists but also many of business world people in Korea were participated. Through the communication in this symposium and field tour, we shared recognition about the importance and roles of market information concerning to merchandising and the introduction of logistics as a set for handling differentiated products in stable and efficient mass-marketing system.
    Major research results are as follows
    We employed the industrial organization analysis method. Current food industry is being re-organized by the leadership of retailers such as supermarkets, convenient stores, and several types of the direct retail business of producers. Chained Restaurants are also playing principal roles in re-organizing the food supply chain.
    It was found that "the food safety" is viewed by consumers as one of the principal product qualities and indispensable commodity attributes. Therefore, the food safety should be regarded by producers and processors as one of important sources of value-adding. Our study contributed to the economic theory where food safety is focused.
    More direct quantitative analysis of consumer behavior concerning the attitudes of commodity purchases had done with using consumer monitoring data so-called "Home Scanning Data", which are recently became available.
    We continue further works for preparing publication as a book which is scheduled to be completed before the end on June 2002.
